Homemade Beef Burger

  • 500 g minced beef
  • Salt and pepper

Creamy mash potato

  • 2 pounds potatoes, peeled and quartered
  • 1 cup milk
  • 1 tablespoons butter
  • Salt and ground black pepper to taste

Healthy Eton Mess

 

  • 1 large or 4 individual meringue nests*
  • 500g fresh strawberries/frozen summer berries (defrosted)
  • 450g fat-free vanilla/Greek yoghurt**

Method

Homemade Beef Burger

  1. Place all ingredients in a bowl, mix thoroughly with your hands preferably
  2. Roll into balls, portioning based on the size of the final patty or meatball you want
  3. Place the balls on a plate and refrigerate for 20-30 mins
  4. Heat a frying pan
  5. Press the refrigerated balls flat into patty shapes and cook over a medium heat, until browned and cooked through, for small patties like pictured this was around 5 minutes each side.
  6. Oven cook for around 15 mins
  7. Serve

Healthy Eton Mess

 

  1. Break up the meringue nests with the back of a spoon
  2. Then either simply layer the ingredients in glasses: yoghurt, meringue, berries, yoghurt, meringue, berries, yoghurt, meringue
  3. OR mix the broken meringue nests and yoghurt together before folding in the berries and spooning into glasses or bowls - top with sliced strawberries or berries or crumbled meringue!

Creamy mash potato

 

  1. Gather all ingredients.
  2. Bring a large pot of salted water to a boil. Add potatoes and garlic, lower heat to medium, and simmer until potatoes are tender, 15 to 20 minutes.
  3. Drain potatoes and return to the pot. Slowly add milk and butter, blending it in with a potato masher or electric mixer until potatoes are smooth and creamy.
